These chickpea blondies are a real treat. They are rich and moist with a satisfying texture. They are made without refined grains, sweetened with maple syrup, and higher in protein than most sweet treats. Perfect with a mid morning coffee.

These blondies are made with the following ingredients:

  • Chickpeas
  • Oats
  • Peanut butter
  • Maple syrup
  • Baking powder
  • Vanilla essence
  • Salt
  • Dark chocolate chips

How to Make Chickpea Blondies

These chickpea blondies are easy to make and don’t require too many ingredients.

First you open the can of chickpeas and drain the water. Place the chickpeas into a bowl and mash into a smooth paste with a potato masher.

Then you place the oats into a blender and blend into a course flour.

After that you add the ground oats to the bowl along with the mashed chickpeas. Then add the rest of the ingredients and stir until well mixed.

Option 2 is to add all of the ingredients (after draining the chickpeas), with the exception of the chocolate chips to a food processor and then blending until smooth. Then fold in the chocolate chips.

Next you add the mixture to a silicone tray of around 6 inches by 6 inches square, or line a baking tin with baking paper and add the mixture. Then place into a pre-heated oven at 350 degrees Fahrenheit for 25 to 30 minutes.

You can check if the blondies are cooked by piercing with a cocktail stick or other wooden stick. If the stick doesn’t come out wet, the blondies are ready.

This chickpea blondie recipe is gluten free, providing you use gluten free oats, however if you are celiac it is recommended to check the labels of all ingredients just to be sure.

Ingredients
  

  • 14 oz chickpeas (can)
  • 1/3 cup peanut butter
  • 1/2 cup maple syrup
  • 1/2 cup oats
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips

Instructions
 

  • Drain the chickpeas.
  • Add all of the ingredients except the chocolate chips to a food processor and blend until the mixture is smooth and everything is evenly mixed.
  • Add the chocolate chips to the mixture and fold in until evenly mixed.
  • Add the mixture to a 6 x 6 inch silicone baking tray or line a regular baking tray with baking paper and add the mixture. Smooth out with a fork until even and place in a preheated oven at 350 degrees Fahrenheit and cook for 25 to 30 minutes until the blondies are a light golden color. To test that blondies are cooked, pierce through with a wooden stick. If the stick doesn't come out wet then the blondies are cooked.
  • Remove the blondies from the oven and leave to cool for 30 minutes. Then cut into squares.
