Chickpea Blondies
A rich and delicious sweet treat made without refined ingredients. High in protein and sweetened with maple syrup.

- 14 oz chickpeas (can)
- 1/3 cup peanut butter
- 1/2 cup maple syrup
- 1/2 cup oats
- 1 tsp baking powder
- 1 tsp vanilla essence
- 1/4 tsp salt
- 1/3 cup dark chocolate chips
Drain the chickpeas.
Add all of the ingredients except the chocolate chips to a food processor and blend until the mixture is smooth and everything is evenly mixed.
Add the chocolate chips to the mixture and fold in until evenly mixed.
Add the mixture to a 6 x 6 inch silicone baking tray or line a regular baking tray with baking paper and add the mixture. Smooth out with a fork until even and place in a preheated oven at 350 degrees Fahrenheit and cook for 25 to 30 minutes until the blondies are a light golden color. To test that blondies are cooked, pierce through with a wooden stick. If the stick doesn't come out wet then the blondies are cooked.
Remove the blondies from the oven and leave to cool for 30 minutes. Then cut into squares.
