No-Bake Cannoli Dream Truffles
1 sleeve plain graham crackers, plus 5 cookies, chopped into bite size pieces
1/3 cup unsalted pistachios
1/3 cup semi-sweet chocolate chips
1 tablespoon unsweetened cocoa powder
8 ounces ricotta cheese, drained if needed
1/2 cup confectioners’ sugar
1 tablespoon orange juice, plus 1 teaspoons orange zest
1 1/2 teaspoons vanilla extract
Pinch of salt
1. Pulse the sleeve of graham crackers in a food processor until they resemble fine sand; set aside. Pulse the pistachios in a food processor until finely crushed; set aside. Place the chocolate chips and cocoa powder in the food processor and pulse until finely crushed.
2. Pulse the ricotta cheese, confectioners’ sugar, orange juice and zest, vanilla extract and a pinch of salt in a food processor until very smooth and creamy. Pulse in the crushed graham crackers until the mixture comes together and forms a “soft dough”.
3. Transfer the mixture to refrigerator until the mixture is somewhat firm, about 1 hour or overnight if desired. Roll the ricotta cheese dough into bite sized balls, about 1 inch. Stick a piece of the graham crackers in the middle. Roll one side in crushed pistachio and one side in the chocolate and cocoa mixture. Refrigerate until ready to serve.
