In case you don’t know her, Erin McKenna refused to believe that making vegan, nut-free, gluten-free desserts that could rival the “normal” versions was impossible. After her late night shifts of hostessing at a hot NYC restaurant, she would go home and work late into the night mixing together little known, under appreciated gluten free and bean based flours until she came up with the perfect combination. It took her a few years of repeated, painful trial and error to nail the perfect vegan flour formula, but once she got it she knew the sky was the limit. She opened a bakery in NYC which became wildly popular; she was crowned one of the original vegan eats queens. Her bakery and recipes were so popular, in fact, that Disney World recently asked her to open one in the Magic Kingdom (dreams!). Erin: If you’re new to a vegan diet and looking for places to eat, head to Instagram and search popular tags like #veganfoodshare #vegansofig #plantbased or, say, #vegannyc if you live in NYC. There are spots and menu items that others are fanatical about and it’s fun to browse. You’ll quickly find the best of the best and save a lot of time (and money) trying places or dishes on a whim.
