cherry & basil collins
The proportions matter in this drink, especially for the cherries and lemon juice. It may sound fussy, but when I added just one more cherry, that little bit of extra sweetness overpowered the lemon flavor. So you’ll want to follow the measurements closely on this one.
NOTE: The ingredients for this delectable cocktail are inspired by what we are finding at the farmers market in NYC, like, RIGHT NOW – let’s rock those cherries while we got ‘em (the season is very short)!
1.5 OZ VODKA (I like Kettle One)
3 FRESH CHERRIES
1 BASIL LEAF
1 OZ FRESH LEMON JUICE
0.75 OZ SIMPLE SYRUP
2 OZ CLUB SODA
- Remove pits from the cherries and drop into a cocktail shaker (or large glass) and squash them with a muddler or just the handle of a wooden spoon to get the juice out.
- Add the vodka, basil leaf, lemon juice, and simple syrup.
- Shake with ice.
- Strain into a glass, over ice if you like, top with the soda water and stir.
- (Optional) Garnish with a cherry or basil leaf if that’s your thing.
Reminder: Simple syrup (in the recipe below) is easy: Stir equal parts plain white sugar and water over low heat in a saucepan until all of the sugar dissolves. Don’t overheat the pan and turn the sugar to caramel, peeps!
